    Take the roasts, cut medallions 1/2 inch thick across the grain & run through 2-3 times, alternating directions. Piece of cake.

    Last two I killed, trimmed and halved the heart, quick freeze, then shave like steakums and dice. Fried up w onions and fix like a steak and cheese. Aleays fried em up before but this was excellent.

    Also boiled the tongue on the last one. I will be doing that from now on.
