    I have done it lots of ways, but the "real" California BBQ way is to rub it with Black Pepper, Kosher Salt and Garlic Powder. I get my grill to 350 and put it on……..flip it after about 15 minutes or so and do the other side. When it hits 140 pull it, let it rest 10 minutes or so and enjoy. Cut across the grain like a flank steak.

    You will need to trim it up a little too.

    New York Butcher Shop on Gervais and Woodrow always has them in the cooler. They have the best beef in Columbia, hands down.
