with the summerducks and grits.. in the pan is just olive oil, searing the ducks.

the sauce, veggie stock, garlic, salt, pepper, sun dried tomatoes, a smidge of tomato paste, mushrooms -morels and porcinis is what I had on hand, heavy cream - after everything was incorporated properly, I brought it back up to level with the cream, and reduced that back down.

the beef tenderloin was just my rub

Thanks. My sauces are always kind of flat, and I try using lemon or white wine to balance them, but sundried tomatoes sound much better.

I typically have sun dried tomatoes laying around, I just love the damn things. I really just added them for something different, thinking they'd mesh. It was the same thing with the spoonful of paste, it was for appearance, for color and a little depth. White wine is cool, if you're looking for a flavor base. Once you get the garlic done, tomatoes, and all of that.. add the wine and bring it back down, add in the cream and bring it back down halfway. I don't have wine laying around my house anymore.

fyi, I liked the way this one turned out.

That has to be Jimmy Brock with the orange shirt on. Fun guy to hunt with. I've known him most of my life. He used to live next door to my uncle on West Main.
