    Default Wild Turkey and Rice

    Take the four leg pieces and put them in an Instapot for 65 minutes with 1/2" water. Pick meat and set aside. Strain aside the broth to about 2 cups. If you don't have an instapot, you can just cook the quarters for several hours until tender while adding water.

    Cook 1.75 cups of Uncle Bens rice for about 8 minutes and drain water off in colander.

    Brown 1.5lb of bulk Italian sausage in a big pot. Add one med diced onion, about 2 cups of sliced shrooms, 4 sticks of chopped celery, about 2+ cups of chopped carrots and simmer for about 8-10 minutes. Salt and pepper to taste - sometimes add some crushed red pepper or Tony C's.

    Then fold in the rice and picked turkey well. Should have most all the liquid cooked out but if it does not, heat it high and leave the top off while stirring. Fluff up and enjoy.
