Smoke several turkeys for the Thanksgiving/Christmas every year, also fry some too but smoked is my favorite
I brine my 24-36 hours and then inject and rub with cajun seasoning and sprinkle little brown sugar on them as well
I use a Masterbuilt Electric smoker and preheat at 275 and this bird was a 15lb bird, cherry wood chips. Last couple of hours I will spritz with apple juice every 30 minutes or so
Wish I had taken pics of the smoke ring on this one, turned out PERFECT
