    Default Paleo Sweet Potato Casserole

    Need:
    2 lb ground meat
    1/2-1lb of bacon, I went with 1lb
    8-10 eggs
    4 large sweet potatoes
    1 large onion, I went with a yellow
    Spices (This one is up to you)
    1 large deep skillet or pot
    Coconut oil or congealed bacon grease
    Crock pot

    Prep:
    You can either peel the sweet potatoes or leave the skin on, I left the skin on
    Microwave the potatoes for a few minutes to soften the up
    Slice in 1/8"-1/4" slices
    Cook bacon and place to side
    Dice onion and brown 2 lbs of ground meat, cook until onions are translucent
    Add your spices and seasonings
    Whisk eggs

    Assembly:
    Grease the crock pot
    Line bottom of crock pot with a layer of sweet potatoes, just enough to cover the bottom
    Spoon in the onion meat mixture and break up some bacon and spread around
    Layer with more sweet potatoes and keep repeating
    Once you are done layering, pour the whisked eggs over the top and they will make their way to the bottom.
    Cook on low for 6 hours
    Allow to cool after cooking if you want it to look neat on your plate or you can do like I did and scoop it right out.

    Sounds kinda odd...

    I wonder what this would be like if you were to whip the potatoes and everything all together? Then bake it...?

    It had a different taste and I'm not sure if I'll do it again, but it was worth trying.
