Most we get here are Alaska or Northern British Columbia wild caught. Vaccum packed.

And they haven't been raised on corn meal with coloring added. Don't tell me you are complaining too.

Get a little Byron's butt rub (the same stuff made for bbq) and sprinkle over both sides. Then grill. It's best on the EGG if you have one...of course. I was shocked at how good it was the first time I tried it.

Nope the chicken of today is mighty sad fare indeed.I much prefer wild caught yardbird to the itty bitty caged up ones.I draw the line at caged fish!

I had some a few weeks ago that was very different and fucking good.

    Get some wonton paper.

Take your filet and set it on the paper.

Put a big fat blob of butter on top, salt, pepper and black truffles. Wrap it up nice and tight and drop it in a pan of hot clarified butter and a little olive oil.

Flip it once and finish it in the oven for a few minutes.

Dig into a little slice of low fat heaven.

For the record, wild caught salmon (sockeye is my favorite) needs nothing more than a hot grill, olive oil and maybe a little sea salt...

Never found a fish I don't like, except salmon. It just doesn't taste good to me, give me eel or shad roe any day just don't give me any of that pink stuff.
