    Yellowfin caught that day is my favorite. Even though it is not a fish, hand picked scallops from the gulf is pretty good also.

    Sheepshead, yellowfin and very fresh Spanish.

    IMHO, flounder and dolphin taste like whatever you season them with. They are bland fish that folks that don't even like fish can tolerate because they don't taste "fishy". They can still be good but they don't bring much to the recipe other than texture and a medium to hold spices.

    This tough for me so I have to break it down by location.
    Inshore: redfish
    Offshore: yellowfin followed closely by wahoo.

    Redfish and tuna each have their place so it's hard to say which one is better.
