    and WNW--meat in a tomato pie is good with me!

    I am glad this is posted. we are making a couple tomato pies a week these days and they are often runny. i think it takes a few hours to make a tomato pie correctly, and we just dont take the time as often as we should.

    --you MUST bake the shell first.
    --you MUST dry the maters out. paper towels then a drying rack works for us. I am not afraid to leave them out for hours. (i am actually considering trying a dehydrator for a short time prior to making the pie).
    --salt helps the drying process
    --any cheese works (but mild cheddar is unacceptable. it must be sharp or extra sharp)
    --sausage in the bottom is a go-to for us. plus some fine vidalias...and lots of fresh basil.

    Onions is a good call, I'll have to add them next time.

    As far as meat goes I'd rather keep it simple. The cashier at the grocery store ask if I was putting bacon in it? Why does everything have to have bacon in it these days? Don't get me wrong I like bacon as much as the next guy, I fry two eggs in bacon grease every morning. But bacon doesn't have to go in everything.

    Willk gave me a good tip to always use miracle whip. He said it's the best mayonnaise there is

    The olive oil miracle whip is the best mayo around. Puts that nasty dukes stuff to shame.
