The drumstick will go entirely to grind(other was broken and bloodshot, reason for the cull). There is no meat on the breast whatsoever. Steaks come out of the rump/tail section.

Forgot to update this thread but....44lb (live weight) bird yielded 16lb. of meat. One leg was injured as mentioned before, so I would have easily gotten 22lb+ (or 50% live weight). Plus a pint and a half of "emu" oil, which I understand goes for $50/2oz. nowadays....
Looks like deer meat, texture of lean beef, with a little flavor of lamb.
