    Default Goose Jerky

    This is the first time I have ever made jerky and it turned out pretty good.

    I did use an oven so I would have to say, it would have been better in a smoker or dehydrator.

    The first two pics are from after I pulled it out of the marinade after 24 hours and let it dry some on the racks in the fridge before putting it in the oven:

    I'm ready to get some more geese so I can make some more jerky.

    Well, I've eaten a quarter of it already and I'm having to keep myself from eating anymore so I can save some for a friend.

    I need to get off my ass and go kill some more geese.

    What did you make your marinade out of and how long in oven? What temp?

    3 tablespoons coarse salt
    1 cup brown sugar
    1 cup water
    3/4 cup soy sauce
    1/2 cup Worcestershire sauce
    2 tablespoons garlic powder
    2 tablespoons chili powder
    3 tablespoons coarsely ground black pepper
    2 tablespoons red pepper flakes

    Marinate for at least 24 hrs in my opinion.

    180 degrees for the first hour with the door closed

    If I could have cooked on a lower temperature I would have after the initial hour but the oven would only go to 170. For the next 4 hours I had the oven set to 170 with the door cracked and then flipped them and let them cook for another 3-4 hrs.

    10-4 gonna give it a shot. I need to just bite the bullet and get a dang dehydrator.

    Been giving geese away. But im ready to breast a few out and try this.

    I didn't you could dehydrate fowl? What about chicken? Seems like it would make you sick?

    You can dehydrate almost anything, the art has been around since ancient times.

    I will definitely be investing in a dehydrator. I want to read some reviews and get one that will last.
