    Default eggplant

    wtf do i do with it? my mom used to make a kickass rattatouli or however you spell it.

    my wife got some garden club thing where you pick up a box of fruits and veggies each week. got two big eggplant in the box. i want to fry them bitches bc i want my kids to eat them. ideas besides that?

    My wife likes eggplant parmesan so I really can't help ya here. I end up frying them.

    You could bread it with some of those damn vegetarian eggs you've got and your wife will go crazy.

    The kids will probably prefer some real eggs.

    And thank the Lord my wife dropped out of her garden thingy. I think it was just another way for the women to get together. For the life of me I couldn't figure out what the girl picking was up to.

    Normal basket.

    1 bell pepper
    7 lemons
    1 head of cauliflower
    6 jalapenos
    2 idahos
    8 red taters
    some bananas and oranges

    its been good so far, HS. lots of leafy greens. usually a bit of fruit. and then lots of weird shit like kohlrabi but at least i am learning new veggies for the family to try.

    You could grind it up and sprinkle it over the top of the rest of the foods people don't like to eat.....just so the dish will look fancy. Don't forget to put your chef ass-hat on first.

    The downfall of ours was that a guy opened a vegge stand next door to me, and he's open six days a week. He also hits the market twice a week, and he'll let me know what they have in.

    Ratatouille is good & hearty; but sort of a cool weather meal, nice with a crusty French bread.

    Fried is great, but like Justin said, you've got to "sweat" the veggies. I sprinkle with sea salt/chef grind [fat pepper] & then layer between damp paper towels for about an hour, before breading & frying.

    Eggplant Parmesan is good. Grilled Eggplant Parmesan is better!

    Eggplant Bruschette is amazing!

    My favorite & easiest way to cook eggplant: On the grill, in what I call a "Hobo Pack": chopped, chunked veggies of whatever you like (I usually use eggplant, tomato, vidalias, squash, zucchini, etc) + garlic, mushrooms, sea salt, pepper & drizzled with olive oil. Seal it all up in heavy duty foil, chunk on the grill & flip it over every once in awhile.

    We make a recipe for eggplant that kicks ass, but it's two hours away at my house....

    It has balsamic vinegar, shallots, feta, basil, salt, pepper a couple other things.

    Toss it on the grill......hot damn.

    Peel the the eggplant.

    Slice into 1/4 inch or thinner sections.

    Spread mayonnaise on slices

    Sprinkle salt, pepper, and Italian seasoning of choice.

    You can add some minced sweet onions and/or cheese if you want (Parmesan maybe)

    Bake on 450 for 13 minutes. Better to over cook them than under cook them.

    They tend to stick to the pan easy so you might want to add some nonstick stuff.

    I've been eating eggplant nearly everyday for months, so I know what I am talking about here.
