    It definitely is a pain in the ass, but well worth the end result. I've got my third batch of the season drying out as we speak. It's addicting.
    Soy sauce
    Teriyaki
    garlic powder
    garlic salt
    black, red, cayenne pepper
    cajun seasoning
    honey
    thai chili
    water

    Looks good.I don't believe it but I got a pop up add for jerky when I opened this thread up.

    You could use loin or backstraps, but I wouldn't waste them on jerky. I cut the ham into roast size pieces and then slice off of them. Then cut whatever is left on the bone off. The colder (not frozen) the meat is the easier it is to handle. Then marinate in whatever you want. You can use your steak marinade if nothing else. Above recipe was about equal parts of the liquid stuff and then a tablespoon or two of the spices. There is no right or wrong way, just pick flavors that you like. Try to get all pieces the same thickness. I try to put all the bigger pieces on one tray and smaller pieces on another and pull off accordingly. Hope this helps.
