So, what is the preferred?? FWIW, I don't enjoy green onions on Gumbo. A hard boiled egg, yes.

Poche's is real good. The best I ever had was from some place in Belle Chase. We can get some OK stuff through USFoods or Sysco. Can't recall the names of them. I'll look tomorrow.

It's not wrong, I just don't prefer them. One constant for me is the Crystal hot sauce. There is no substitute for it.
