I dug out a couple packages of venison burger last week, vacuum packed from Nov 21. Used one for chili and one for burgers. Perfectly fine. Anything too much older than that, I would probably give to the dog.

i dont have to have the FDA or a chart to tell me I'm gonna eat what I kill.
I'll do my best to ration it in a year but if its older, I'm still eating it.

What chamber sealer did you go with?
I’m still eating my moose from 2021. Y’all keep throwing out good meat if you want…
My intent is to be out before the season comes back in. What i give away i give in January while it is still fresh frozen.

We work around the USDA everyday. In the meat industry some of what they do is BS but we have clean healthy meat and produce as a result. They always er on the side of caution. If in question they will condemn it. We once had at truck load, 55,000 pound of hanging beef condemned and thee inspector followed the truck to Carolina By products to insure it was dumped.
