    Default Tempura Duck Poppers?

    Gonna deep-fry some traditional poppers this evening with egg wash and Panko. Anybody ever tried this or something similar? Holla back.

    If you’re wanting tempura style batter, mix the flour, egg whites, and ice cold water. Mix just until it’s a little lumpy. Dip and then drop into grease. I like to use ginger, pepper, garlic powder, celery salt, and brown sugar.

    I’m not a big fan of fried duck, usually gets tough. Medium rare is my go to.

    Tempura fried duck bites with a mai ploy or any other sweet Thai chili sauce is legit. Just flash fry. Leave ducks rare+/med rare.

    Cut duck in strips, soak in mustard, dredge in flour and quick fry medium rare. Easy and tasty!

    Depending on the duck and where shot/food source, I choose to accentuate or mask the natural flavor.

    My favorite is a cold dry field corn fed mallard, followed up by a eel grass brant.

    Bottom of the list is probably a pluff mud merg.
