    Default Cut up, Freeze, Grind, Refreeze

    Any of y'all do this to deer? We've doing our own processing for some time now and mainly do burger and bulk sausage. Can I freeze cut up chunks, unfreeze later to grind then refreeze?

    I've done it in the past when crunched for time. I would leave it as whole as possible and vac seal. If you chunk it up first, it won't get all the air out and will get freezer burn quicker.
    I do this with pork regularly.

    I try to avoid that even with fat and trimmings.

    Get as much air out and leave as big of pieces as possible and process as soon as you can and you’re good.
