    Will, enlighten me on this oyster dressing? Can the oysters be from out-the-can or is that sacrilege?

    I crumble up stale hotdog buns and bland cornbread.
    Saute celery and onions in copious amounts of unsalted butter.
    In a separate pan I will place my fresh shucked oysters (not from a can) and blanche them over medium heat to get rid of excess liquid.
    Add all the onions, celery, butter, oysters to cornbread and bread crumble and salt and pepper to taste. Use tons of butter.
    I like to line the bird cavity with cheesecloth and stuff it so you can pull the dressing out in one fell swoop.

    Oysters, crumbled saltines, butter and cream. Edited to add mace as an ingredient.

    We do a sausage based dressing/stuffing and it's usually the first empty pan.

    Unfortunately is the year to do it with the Wife's extended family who ain't from the south. Fortunately she is making me a sweet potato souffle for me to have when we get home. It will be bland ass Wisconsin folks food. The bread and cheese will be good.

    The old Compass seafood restaurant near Turbeville had a good oyster dressing. I wish I knew who made it

    One turkey on smoker and other one in fryer.

    Wife has made everything else, Mac n cheese, green beans, deviled eggs, dressing , sweet potato soufflé, mashed potatoes and 2 pecan pies (I got fired from pecan pies when I made mine with bourbon couple years ago. Seems I was only one that liked them)

    Now we got to load it all up and head to Daugher/SIL’s for Thanksgiving day meal

    Smoked one last night; warming up the grease for #2 now.

    Maybe just me but the smoked is my favorite , only did a bone in turkey breast for smoker . It was done “Texas Style” , skin removed kosher salt and heave course pepper. Before up to temp wrap in foil with butter to finish . Sucker was off the charts and was quickly devoured by my family

    This is best part of Thanksgiving, Truly I am a blessed man.

    The one on the tractor is 3 yrs old and wide open
