    Default Pit Boss - P settings

    Do y'all ever fool with the P settings to try and dial in a temp or do you just keep it at factory default setting of 4. Putting a butt on tomorrow night for an overnight cook. Don't want to get too hot or too low, and I don't want to babysit it all night either. Thoughts.

    It's not that important to keep the temp perfect on a butt. Just wrap dat biotch round 175* and let it roll to 205-210*

    Oh I know. I've just read several different things about big temp swings and trying to avoid that. Just don't want to wake up at 6 AM to a crispy butt

    I never had a problem with temp swings on the factory p settings. I think the p settings more controls the smoke but not sure. Either way, take that pit boss to the hunt club and buy yourself a recteq. You won’t be worrying with these things then for sure.

    I don't wrap. I cook until 205ish unwrapped.

    P setting controls the pellet feed rate to help smoke in extreme temperatures. In other words, just leave it at the factory setting.

    I would avoid using the p setting if you aren't going to be around to watch it, or atleast not until you play around with it and know how it works. You run the risk of the grill going out with the p setting because it doesn't use the thermostat to control the grill (send more pellets), but instead sends pellets on a timer.

    I have only used the p setting on mine to smoke snack sticks because I wanted to cook it at as low of a temp as possible. All other cooking, I just use one of the regular temp settings.

    I never wrap shoulders or butts. Usually have a cook time for each and keep meat rotated but I use an oil drum cooker , easily cooks 12 shoulders or about 20 butts. The best thing to remember is not to over smoke your meat. To much smoke just overpowers the meat. The new fangled smokers control the smoke well but many over do the smoke.
