In case you didn't know
Score the top of maters with a sharp knive, drop in really hot to boiling water for 30 seconds and then drop in ice water. Peeling will just pull off and then I core them and slice in qtrs depending on size. Boil jars for 12 mins. Take boiling water and pour over the lids and rings. Pack jars with maters, add 1 tablespoon of FRESH lemon Juice per pint and 1 teaspoon of salt. Boil the jars for 30 mins. The wife and I got it down to a system. Hope this helps.
