I like the segregation of ingredients.
My stomach is perfectly capable of mixing the stuff later.
Hers at least in the early stages had the promise of being able to distinguish the different textures and flavors rather than just a big cabal you throw in your mouth.
The love and care for the ingredients got me excited it wouldn't be just another bog.

Yellow rice for pilau? Not from here obviously. Pilau was and had always been cooked with white rice, fella. The kind that used to grow here.
I prefer Crystal hot sauce or Cholula on mine. I made a big pot for a tailgate and a bona fide yankee gal asked if I could make it healthier. I said I reckon but it won’t be fit to eat then.

I’ve always been of the thinking both are the same just a bog was more gummy and perlo was fluffy. Either way I bet both were great!

I'm with you ricky. A bog to me always meant big cast iron pot at the hunting club, full of dark meat chicken, smoked sausage, a couple acres worth of onions, and enough black pepper to change the color. You could get a big glob of rice with every bite. It would stick to the fork! This mix would be served with a big ol pot of Lima beans, sweet pickles, a loaf of fresh white bread, and sweet tea. As for the perlo, they always seemed to be served on a buffet at a restaurant. It would consist of parboiled rice, white meat chicken or pork, a hint of onion and dry as a chip. You'd have to use a shovel to scoop up enough rice for a mouthful. I'll eat either but prefer a bog any day!
Any of y'all ever had chicken gizzards in a bog or a chicken stew? As a child I always remember these old time country folks adding gizzards in their stews and bogs.
