Looks great! Only suggested improvement would be to try wrapping in butcher paper vs aluminum foil. Seems to help with the bark, at least in my experience.

Anywhere in the midlands that has good brisket? I've only eaten a couple times and haven't been impressed exactly. I would like to try to cook one but want to know what a good one is supposed to be like before I do.
Good God I'm craving some brisket now. So far I've yet to find any good BBQ place here in VA and it sure is creating a hankering for some quality 'cue. Looks good, post pics of the next one!
Yeah, but do you consider a dog to be a filthy animal? I wouldn't go so far as to call a dog filthy but they're definitely dirty. But, a dog's got personality. Personality goes a long way.

FWIW brisket isn't cooked to a set temperature. You cook it until a toothpick or probe slides into like butter. It might be 200 degrees, it might be 210. I start checking at 200 and go from there. When it's done right it's delicious and when it's done wrong it tastes like shoe leather.
Surprisingly Westfall when it was open across from me had some pretty good brisket at the start. It doesn't travel all that well though. Rodney is cooking some around town with his rig, Farmers Market on Saturday, he cooks where Triangle was on Thursday and Friday. His ain't bad.
