Smoked Duck.
A guy in our club makes some of the best smoked duck I’ve ever had. Still have a few left from the season so I decided to give it a try. Controlling the heat to around 175 is absolutely crucial, but for the first try I was really happy. They’d smoked for a little under 2 hrs. It was even better after a couple days in the fridge in a vac seal bag.
