I made one on the dock out of that white stuff they us for food prep. Put it on top of plywood. You know anybody in the processing biz, chicken, turkey, beef etc. ask them for some scrap piece's.

I've got a John Boos sink with sideboard with a piece of starboard that sits on top. The starboard stradles the sink but is narrower so I can push it back and let the faucet run into the sink front of it. If you're near Charleston, Berlins Restaurant Supply will cut custom sizes of starboard.
I have a 9' double bay stainless commercial kitchen sink that I salvaged from a renovation job. It has a huge prep area on each end that I clean fish on. I made cutting boards out of leftover (new) 3/4" thick plastic bathroom partition stalls.
This setup is at my fish/deer/game cleaning station in the back yard.
I've seen some excellent DIY fish cleaning areas on docks. Just make sure you put a raised edge around it to keep the fish on the table and then leave space under the raised edge for the water, scales,guts, etc. to be washed off.

I bought one of these and it served its purpose... caught it on sale for around $50 bucks
Look around on Craigslist or post here for a stainless prep table.
I get cutting boards from a grocery store.
I have 2 stainless tops that would be great for fish cleaning.
