Try indirect grilling with the sausage. I've only had issues with sausage drying out when the casing breaks and the liquid runs out of the sausage well before the meat has finished cooking.
I throw my coil of sausage on the grill at 400 degrees and turn it once. I'll spread out the coil if I notice any places are aren't as well cooked halfway through. Also, it helps to lay all of the meat evenly on a plate or pan. Leaving meat stacked up in a bowl or in a place can and will cause overcooking while the meat is resting.
