    7 lb boston butt
    5 lbs of pork fat
    1 packet of Legg's #10

    Take 1/2 pound of ground deer meat and mix it with 8 one pound packs of jimmy dean.

    I just made some for the first time last week. I did 20lbs deer meet, 5 lbs pork fat and a pack of legs #10. Better than any processor I've ever had.

    Ifn I wanted pork sausage I might would use a butt. BUtt if I want venison sausage I ain't usin no dam Butt, just pork fat.

    U needed more fat. Use 15 lbs of deer meat 10 lbs of fat. Leggs per guidlines. Extra sage and red pepper to your liking. Do yourself a favor and do straight pork sausage with your boston butts , but you will still need extra fat with the butts.

    I've been making summer sausage with a kit from Hi Mountain. I get the Jalapeno Summer Sausage and it's killer. I make 10 lb. batches of meat that includes 100% lean burger deer meat and 36 oz. of chopped bacon. That makes three logs that I cook on the smoker. I don't use any special tools, grinders, or stuffers. It's really, really good.

    I've never calculated it. I end up with way more deer meat every year than I can use or give away. I started just as a way to use up meat. The kits cost around $20 from Midway and each makes 9 sticks. Bacon is about $8 per pound. Not counting the deer meat, my time, charcoal, etc., they are around $25 a stick.

    I do 60-40 deer meat to pork fat in mine. Then add some pepper flakes, cayenne, smokey paprika, onion flakes, and Legg's.
