    I wasn't referring to you. I think you have a grip on what you're doing.

    A lot of guys throw their steaks on a grill, over cook it, then cut into it and see some pink and think they have a medium rare steak.

    100% agree with Ralph on this one. Sea salt is the only thing I put on a steak and at least half of it comes off after I pad the steak dry when it reaches room temp.

    I cannot imagine the crappy cuts of beef you have had to endure to think that deer round steak is better than a mid rare ribeye.

    I don't know about the science behind this stuff but this method has been producing some legit ribeyes. Juiciest most flavorful steaks I've ever had. With the 2" thick ones I've been doing a reverse sear with the same prep and finish.

    I spend way more money on steak than I should. Treat yo' self.

    Uhhhh I get all my cuts from caughman's or ole timey. Wouldn't call that crappy. I just enjoyed the deer... wasn't better my any means but it sure as hell wasnt bad. For my money I'll go with the deer 9 times out of 10 from now on.

    10-4. i misunderstood. I thought the patting dry was AFTER cooking/resting. thanks for explaining that its in your prep.
