    Default Simple Saturday & Sunday eats.......

    Saturday weather was glorious.

    Excellent grilling weather....as if there is any other kind. Hot, cold, rain, shine.....IDGAF....if I'm off work and chilling at the house then the coals will be fired up.










    Got my side dish rolling first as the coals were coming on up to temp.













    Used these two rubs.....Smoke Stack base layer with Plowboy's dusted on heavily. Much of it gets knocked off on the grates so I apply liberally.





































    Didn't sauce this bird, but hit it with some of this finishing rub at the very end of the cook.

    Nice work. Where have you been?? Hope all is well with you and yours. Thought of you yesterday as I ran 100 through my TRP.. We had a fine range session in Erhardt,SC..

    It topped 16K this weekend. No jams, no broken parts, etc. Getting some nice wear on the finish from presentations. My old Sparks SS2 is about to be replaced.. it's tired after 20 years.

    How is your wife?? My very best to you both.

    Coolest thing yessaday.......watched my ass Pirates win their second game.......and during a mid-game screenshot....saw my former next-door neighbor on the screen.






    Wife and I couldn't stop laughing at this.


    Dude was a steak wizard and hooked me up on the best steak methods ever in my grilling elementary stages. He and his sweet wife threw some killer parties and was a great neighbor to live next to.

    Fun tailgating and such.

    Go Pirates !!!


    Seeing as I have a long weekend off.....I asked my son the other day if there was anything specific he wanted me to cook.

    He replied instantly that he wanted some more double-decker tacos.

    Done.

    This afternoon....the usual suspects were lined up....










    Fired up one of the Weber kettles and let it roll along until I was ready.








    I should disclose at this point that a heap of ZZ Top tuneage was enjoyed loudly during this cook.


    A proper batch of guac was made because I like it.....and the wife likes it.









    Got some lean ground beef, chilis, jalapeños, garlic and Vidalia on the simmer.








    Meat Church Fajita rub on the steak & leftover shicken.









    Messican Street Corn on the kettle with a few poblanos tossed on for good measure.







    Steak went on next.

















    They added steak, queso, tomatoes, sour cream and such horridness after these pics....

    She's doing well.....except her boss is a real deal no kiddin bitchfromhell.


    I recently have been on a couple of events that she was working at and was strapped each time.

    Two of those occasions found my TRP on my hip.

    Wound up in an area infested with crackheads on one occasion......almost had to draw on a rangy dog that came in drooling and stupid looking. No kidding. I'd already found the grip in my hand and was 1/2 out of the MS Criterion holster when he turned away......


    The next event had her OCD boss. My son and I were volunteers at the event. At one point I grinned at the idea of pistol whipping that heifer.

    Her's is the exact opposite of my employment situation: Her boss sucks azz but the organization at large is great. I have a super boss, but the organization we both work for is going through some scary changes.

    Don't hate on me too bad......but my G19 was on my hip yessaday. Rode mighty comfortably in an OWB Raven Concealment holster. My "fat-boy" holster.

    Gotta love having an OWB alternative to our carry guns.

    No worries.....I'll tote a proper 1911 tomorrow. Either in a Sparks IWB or a OWB fat-boy slide, lol.
