    Default What caused oysters to be bitter in oyster stew

    I make oyster stew several times a year for wife and I

    I have always used those "fresh" oysters in the jar and it always turns out great

    Saturday evening wife was craving some oyster stew so I do my stew just like always but the oysters were not good at all

    Actually kind of bitter to be honest

    This was a different brand than I normally get since this was all they had at grocery store

    What would cause them to have bitter taste or was it just those oysters , forgot the brand but came in a jar with red cap on them.

    I did let the stew simmer a tad bit longer than normal, I always like to keep oysters from shrinking much at all and these did shrink some. Maybe that was what caused it

    No R in the month, booooooommmmm! Just kidding, if it is those from the W coast, they are not worth the package they are in.

    Thanks, buddy of mine told me same thing. If Pacfic coast oysters he said they can be bitter.

    Really don't recall where they were from but have never used that type before, damn sure will NEVER use them again

    My favorite Oysters by a wide margin are Kumamotos from Puget Sound. Nothing else comes close. They are fantastic. Belons from Maine, Massachusetts or Rhode Island are great as well.

    Third to them would be the Malpeques from Prince Edward Island. I enjoy the Oysters from NC and SC, but find that to my palate they are not as flavorful as cold water oysters. Caper's Blades are the best SC oyster in my opinion.
