Grilling dries it out too much for me. I’ve gotten flat tired of eating it any way but smoked lately.
Any fish over 50 pounds I filet the first part of the tail to cook in the oven and the rest is just big filet chunks to smoke. It makes one hell of a dip. Tried several different types of wood and my favorite would be the Jack Daniels barrel chips
I have one of those inferred grills or whatever you call them and keeps in from drying out

I like smoked fish dips. When I find a good one, I'll damn near eat them until I get the diarreheas.
I like smoked mullet.
Fish. It doesn't even sound appealing to smoke hair. It would almost be like waking up after camping, that's a nappy feeling.
My year end of fishing has happened, it's like two weeks to shooting birds.
