    Default Runny tomato pie

    How do I keep it from being runny? I dry the slices on paper towels before layering. What else should I do?

    Let it set up just a bit before you cut it.

    If I try to cut mine hot, it gets messy.

    This. And salt the maters while on the drying rack...will help dry them out. Also, let it set for half an hour or so after you pull it outta the oven. It will set up much better.

    Yeah, I cook the crust first.

    I also salt the tomatoes with kosher and blot with paper towels several times before I make the pie.........when I say several times, I mean over like a 30 minute time period.

    It could be a couple few things. The type of tomatoes, and if they're really moist make sure you get out all of the junk with the seeds. Maybe too much mayonnaise? Types of cheese, or maybe too much. I mean I expect them being a tad wet. Baking the crust before should be a given. I don't overzealously salt them, the tomatoes. I cut them on a board, and then slide them into a colander. I shake the shit out of it a few times between the sitting.

    I'll try all of the things listed. I think removing the seed liquid and browning the crust should do a lot.

    Lighter on the Dukes may help. Cheddar cheese can put out a lot of grease when baked, too. I don't try to get a photogenic slice out until the pie has sat in the fridge overnight. Mater pies are better the next day anyway, like chicken bog.

    Cheddar, and it's perfectly fine to throw in some mozzarella. Any other sort of fancy cheese you can just go ahead and call it a quiche.

    I mean I love goat cheese, but it's way too moist.

    Okay, I'm confused. Tomato pie? Why would someone make an abomination such as this? Aren't there better things to eat like tomato soup made from ketchup packets and water?
