    Default Butt

Smoked a butt for dinner. Chopped and sliced. Couple smoked onions and some smoked baked beans. Homemade sauce as well.

    Oh yeah and greasy rice

What's everyone's favorite trick to do when smoking a butt?

Coat it in yellow mustard. I like to place the baked beans under the butt on the smoker. They get smoked and get the pork drippings.

Butts are one of the easiest things to smoke, IMO. It's hard to really mess it up. For most folks, the meat is just a carrier for sauce.
I just rub and smoke @225 over hickory and lump. I have brined a couple that turned out really good too.

Hickory farms makes a cranberry mustard that I get every year at Christmas to use on my butts! It makes the perfect sweet to my heat.

the last time I brined one it turned out like a straight up ham!
Interesting tidbit I over heard a fella talking about recently (who has quite an elaborate set up in Charleston) is he sometimes takes roasted peanut hulls and soaks them in bourbon and uses in lieu of wood chips.

Like said, it's a butt. Probably the easiest thing to smoke besides good old leg quarters

Glad to see someone else getting down with the smoked onions. We love them. Great on sandwiches, especially brisket sammiches.
