I have an instant water heater for hot tea. Use occas in winter. Double ovens with plate heater under. Nice but not necessary. Compactor and disposal. Definitely separate ice maker. Good for the non-yeti cooler also.

I like dual fuel. My last were gas, the only plus was having some flame, broiler applications. With the dual it seems like I'm getting better oven temps.. But I'm not a baker. I cook, a bunch. Now there's no way that I'd go with an electric top. That shit is like camping.
It didn't seem like a big deal but when we did some renovations, but the contractor talked us into upsizing the disposal to a commercial monster. I don't think twice about the size of the bones I throw in there. No matter how much you stuff in it, it not only grinds it up but pumps it down the pipe.
If I was renovating, I'd have a cabinet with plenty of power outlets for rechargeable devices so they don't clutter up the counter tops all the time.

Big sink, big disposal, big cook top with flat iron griddle, get you a good down draft to go with it...u/c trash and recycle cans, cutlery drawer, spice drawer, pull out half moon lazy susan, pull out shelves, slow close hardware, u/c beverage fridge, warming drawer, microwave drawer, led under cabinet strip lights...oh, and a blue tooth sound system.
I'll tell you there isn't such a thing as too big of a sink.
Do you have a pantry? A nice tall pantry cabinet goes a long way if you don't.
Also the design goes along way. Find someone who designs cabinets. Symmetry and functionality are important.
