    Default Halibut

    Dinner tonight

    Succotash was onion, pancetta, limas, corn and red pepper.

    Beurre blanc is wine, shallot, lemon juice, butter, salt, pepper and more butter.........and more butter.

    Halibut and Shrimp were lightly blackened.

    Pretty easy, not low fat.

    got a client that sent me some halibut today from Alaska. Gonna cook it tomorrow. Looking forward to it.

    Mighty fine. Looks like a great meal.

    Halibut cheek is damn good meat. Akin to Grouper throats I reckon. I hope to take the woman to Alaska this summer for a trip. Halibut and Dungeness crab will be caught and consumed.

    is blackened the best way to cook it?

    I have some in the freezer as well that a friend brought me from Alaska.

    Lots of good ways......that was the first time I blackened it (and I barely used any).

    In the oven with butter and lemon is great.........in a skillet, pan seared is good (with just butter and salt and pepper).

    It's easy to cook.

    I'd of liked to have seen some heavy cream cooked down with that succotash.

    Yeah, it's good like that. I had heavy cream in the sauce, I forgot to put that in the ingredient list above.
