    Default Whole Roasted Duck Question

    What are the correct steps to make a whole roasted duck edible.....i tried 5 whole teal in the oven once and i couldnt eat the little turds

    Rare is the way to eat a proper duck. If you can't eat them bloody, don't even bother with whole roasting in my opinion. There is nothing better than a crispy skin on a corn fattened bloody summer duck.

    Marinated, wrapped in bacon, set oven at 500. Put stone in oven, pop birds in oven when stone is at 500. Monitor closely. Cooks in ten to fifteen minutes. Crispy outside, juicy pink inside. Keep in mind that the bird still cooks for a little after it is pulled outbof oven.

    Yes lots of times. Keep fire around 225. And keep a thermometer and not let the internal get over 165. I like 160 better.

    I like them hot and fast. I've smoked a mess, but it's work. Not like that tough of work, but if you're not good at it.. then it's just wrong. If I throw any in a Dutch oven then I'm cooking them long enough to break down the bird enough for like a sauce or gravy or sorts over rice or grits. I like them better on the rarer side though. I don't believe in marinating any decent ducks, there's nothing wrong with their flavor anyways.
