Depends on the bird. They're not a one-size-fit-all. Each strain has a specific group of traits that are matched up to the end use and growing conditions.

A 3.75lbs fast food bird might go out in 4-5 weeks, where an 8-9lbs deli bird goes out in 8.5 to 9 weeks.

My father (stepfather of over 40 years technically) grew up on a dairy farm in Ohio. "Free Range" is precisely the reason he will not willingly eat chicken today. On the other hand, they had a cool box they put chickens in when they caught them for dinner. Imagine an old wooden tool box with a funnel nailed to the outside big side in covering a hole.

Step 1: Put the chicken in the box, close lid
Step 2: Wait
Step 3: Chicken gets curious of the daylight and pokes head through said funnel
Step 4: When its feathers will not allow for the chicken to retract his head, remove its head with a hatchet.
Step 5: wait for chicken to stop running around inside the box, then remove chicken.

He said it beats trying to catch the proverbial "chicken with its head cut off."
