    Default Snowed in

So due to the "weather", our people made everybody go home at 2:00 today. I had to make use of that time somehow and figured I'd better make sure we've got something to eat 'round here since (to hear everybody tell it) we'll be homebound for the next month or so....

Yep - Glenn learnt me. It's my first go-round with it.

3 packs venison burger and a 16oz pkg of Neese's bacon - roughly 5lbs meat total. Mush it all together, then add the seasoning. Squirt it into those casings, let sit a day (mine are in the fridge right now) and cook at 200deg 'til 165 internal.

I'll report back how they turn out tomorrow.

Meh - half size. 1 1/2"dia x 6" or so. Casings and gun can be had at Academy. Plenty of other sources for 'em too, I'm sure.

Gotta walk 'fore I run, ballin'.

Glenn did just that and said it was spot on. I still like the regular ol' summer sausage just fine, but plan on doing that with the next batch. Gotta see how these turn out first.
