I might post pics, and with that said I'm smelling some grease. I made my own remoulade, I don't trust those people on Garden and Gun.
Hudson's in HHI built a peeler house for softshell's w/ 7 tanks filled with crabs in various stages of molting. The manager showed it to me yesterday while I was there for their crawfish boil.
Once their shell begins to split, they're isolated from the other crabs. Once they back out of their old shell, they're put in a final tank for an hour or so before they're boxed up. When they first leave their shell, they leave 95% of their gills behind also - they grow new ones in a few days. If you get these the first day they've molted, you can eat them in their entirety (no need to cut off the face or scrape them). They're also much softer the first day then even a couple days later. I'm picking up a dozen tomorrow.

Got mine from Claimer's family, Mcclellanville , 4 dollars a piece. Backing out of the shell,into the cooler. Had 6 for lunch yesterday.
